Regarding the daisy-chain of two ED10, I would use the USB ports, as this way both units will be powered via the USB and transmit MIDI data. I have one ED4 on the right side of the bass drum, with cables going to that side of the kit, and one ED10 to the left of the bass drum, to connect pads on the left.
And yes, you can use a Mac mini. The Intel generation is fast enough, especially if you add a SSD drive. They have plenty of USB ports. And yes, you can use an iPad to control it. That's how my mini is set up right now, using the free VNC server and viewer.
The newer M1 mini would work too, but you will need a hub, as they only have USB-C ports, so a hub with USB-A ports (and a variety of others) will be needed.

For remoting into your computer, I heartily recommend Splashtop, personal (=free) edition: https://www.splashtop.com/personal
My computer running SD3 is in a rack 10 feet away from me, and I use my iPad with Splashtop to control it. The free version is really all you need. Supports multiple screens and pinch-to-zoom which is a life saver for both SD3 and the eDrumIn Control App.

VNC doesn't work on iOS, i.e. an iPad. That makes it pretty much useless for my purposes.
If you own a newer iOS device and MacOS device, you can use the built-in "Sidecar" functionality, but for older Apple devices, Splashtop is a godsend.

The iPad becomes a touch pad screen for the Mini.
The server side does not support iOS, as I doubt you'd want to control an iPad with a computer!
But the viewer side supports everything else.

You're correct. Don't know how I missed that.
Downloaded and installed it and while they both have pretty much the same feature set, Splashtop's interaction feels decidedly more fluid, even after adjusting network & connection settings. Given that they're both free, I'll stick with Splashtop. Tx

Ok so more noob questions for the Mac guys out there, is there simply a cable to go from the USB C of the iPad Pro to the HDMI out of a Mac Mini that suffices as the monitor connection or is it not as simple as that? And since I haven’t had one in hand to try, I’m assuming you connect the two eDrumIn modules via USB A to USB B of one module, and the remaining USB goes to the Mini? Thanks in advance again, and sorry for needing all the handholding, I’ve just gotten use to buying things I thought I needed and having it turn out incorrect.
*Edit* and I noticed on Splashtop it works via local network, I’d rather be hardwired as this is a kit I plan on gigging with.

That's correct.
