Depends on what you mean by "best", for many the best would be big sizes and affordable, for many roland is the best but their biggest cymbal is 16" and is not available before 2-3 months, the biggest Yamaha is 15" and is very affordable and works great with the edrumin, it's the best value for money right now if you're ok with the maximal 15" size.
The best right now seem to be the ATV cymbals which are expensive but go up to 18" even though I have myself 2 defective, 14 and 16 edge broken, in the last 12 months or so which I had to send for replacement, so there is the issue of reliability in the long term and diminished market outside of Europe since they just went bankrupt in the US... I tried the GEWA 18" Ride which is 100 bucks less than the ATV and it worked perfectly with the edrumin as 3 zone ride with one cable like a yamaha.

Ill go ahead and get the 13 and 15 inch yamaha cymbals then.. since half the price and no clear downsides why not..
The hihat is another question.. I got the yamamha pedal but It is only about 4 different values for the hihat.. but maybe there is no great hihat pedal.. Then open and close find but that middle area seems impossible to emulate with edrums

I love my VH-10 but it's pricey. I've heard good things about the GoEDrum hihat controller. Worth a look at $60.punkouter2021 wrote:The hihat is another question.. What is the rule on levels on hihat? Isnt it a combination of what the pedal allows and what the vst allows ? How many variations is the VH-10 ? Mine is I think 4 levels of open/close but I never use it.. Its always open or close.. when messing in between it sounds fake and strange.

For the VH-10/11/12/13 and pretty every Roland hihat setup, the number of levels is dictated by the VST.

SD3 has 8 levels for each: edge, bow, and bell so 24 articulations in total.
For example:
Tight edge
Closed edge
Open edge 0
Open edge 1
Open edge 2
Open edge 3
Open edge 4
Open edge 5
Repeat for the bow and bell. I have all levels working with my VH-11 controller paired with an ATV 14” cymbal.
There are placeholders for shaft as well but the two hi-hats I use do not have articulations for shaft.
Then you have foot chick and foot splash.
For example:
Tight edge
Closed edge
Open edge 0
Open edge 1
Open edge 2
Open edge 3
Open edge 4
Open edge 5
Repeat for the bow and bell. I have all levels working with my VH-11 controller paired with an ATV 14” cymbal.

The eDRUMin with a VH-10, when properly calibrated, sends out a continuous range of CC4 messages between 0 and 127. SuperiorDrummer 3 has 6 different articulations for the hihat (double or triple that if you count bow and bell), from "tight" to "closed" to fully "open", as well as chick and splash. In addition, it has response curves for both motion and velocity. This is how I setup my VH-11 with SD3.
The only articulations that are MIDI mapped are the closed and open (for chick and splash), and the edge, bow, bell CC Triggers. All the other articulations that I want are turned on but are not MIDI mapped. They don’t need to be. SD3 will pick the correct articulation based on controller position and which zone is being hit. I then ensure my eDRUMin is sending in the proper MIDI notes for the SD3 CC triggers for the hi-hat cymbal. Then I make sure the controller is sending the correct CC, foot and open notes.
