Give version 1.3.0.6 a try.
I've added a switch sensitivity control. Leave the sensitivity as 'low' and see if it helps.

I still think an Edge Scaler that goes less than 1 would be useful. Even with the new Sensitivity Switch Set to Low, and playing my strokes as evenly as possible, the new Output Level display (thanks for that, super useful!) shows that the edge of my hihat, for example, is consistently hotter than the bow. If I could set the Edge Scaler to something like 0.9 or 0.8 I would be able to match the two articulations better.

That sensitivity setting is not going to have an impact on the velocity of the edge notes. In order to make the scaler go below 1, I would need to make significant changes. I'll save that for version 1.3.1.

The 1.3.0.6 version did not solve the problem.
I used a brand new Roland cable to be sure. As I tapped the middle of the bow I clearly get the bow sound with appropriate volume per velocity. As I get to velocity values between 58 and 80, the edge sound breaks in and the velocity jumps to 112 (noticeably suddenly loud).
The actual edge strikes perform as expected for me.
I switched the sensitivity between low and high and repeated the steps. I got no noticeable difference.
I am really happy with the performance of the ED10. I can get the sounds I need with mono settings, so I can can't recommend chasing this issue down much further. However, I am willing to assist further if needed.

I'm curious to see what's going on with the pad. If you don't mind exporting some data for me, I would love to have a look.
0. Make sure the CY-5 is setup as piezo / switch.
1. Right click on the eDRUMin logo 5 times.
2. Left click on it once.
3. A record button will appear above the velocity curve area, press it once to begin recording.
4. Hit the pad about 20 times from soft to hard.
5. Press the record button again to stop recording.
6. Email the file ED_Data.hex that will appear on your desktop to support at audiofront dot net.

I tried it again with 1.3.0.7 (from last go at about 1.2.0.10)
the cy5 is much, much improved from when I tried it before, but my experience is still quite similar to ratamacue's. low sensitivity did seem to make a difference and adjusting the edge scaler also helped. but the edge is much hotter than the bow for me too
when I go back and use it in the td9, that module distinguishes clearly and smoothly between the bow and edge. so the cy5 as a hi-hat, currently, the td9 is better, but the ED4 is good and much improved

1.3.0.9 solved the problem completely.
My issue was slightly different in that the bow would trigger the edge when struck hard. I never noticed that the edge was too hot per se because I was focused on why the bow seemed broken. I had tested it with a Roland module so I knew the pad wasn't broken.
