Additionally, I will initially try a single center piezo instead of the group of 3 you have, since I understood that you did not try this yet combined with the pot meters. Would be cool if it's possible to get the a similar result with less parts!

I'll also start without the rim triggers and only focus on the mesh head triggering first. If I manage to get it working well I'll add those later.

What gain level range would you consider this is in the edrumin? Something like gain = 5 where you have to really hit hard to get a 127?

This depends on pot(s) position. When home I'll post here my settings, as you requested.
But in my opinion they are of no use; too many variables in this equation (mesh head, tension, cones, piezos, etc.)

what adhesive / dots did you use under the piezo? and what did you use between the piezo and cone?

Double sided foam dots. About 1mm thick, ceramic size. Same in both places.

I've done some experimenting and my impression is that the EVA foam is too firm. Hard to get a sensitive response, also a lot of double triggering after calibrating. For the amount of cones and triggers in place I still have to crank the very high even with the pot meters turned fully open.

Also, the piezo's I have now, have the + connection soldered to the center of the piezo, which is not ideal.

I've ordered some BQLZR foam cones and other piezos from amazon, so I'll continue experimenting when those arrive. Migght also try AKA wayne's variant with the reverse polarity on a single center cone to see how that works for me.

I suspect your sensitivity problem may lie in the fact that you're using the same size adhesive dot under the piezo as between the piezo and cone.
Piezos need to bend or deform in order to produce a signal. The dot on top of the piezo pretty much needs to cover the entire surface. That way the force applied to the cone pushes down all around the circumference, and the edges being unsupported will bend downward against the fulcrum created by the ceramic sized dot. With the dots being the same size, you're merely putting the ceramic center in mild compression with no bending. The smaller you make the dot under the piezo, the more bending occurs as the the fulcrum moves inward and hence, more sensitivity.
