Hi, do I need these adaptors to be able to use a 3 zone ride/cymbal on 1 input on my ED or will the ED handle it itself on 1 input?

Yes you would need one of those adapters.

How does this work? How can it carry 3 signals (piezo, switch, switch) over 2 wires (T, R)?

It puts a resistor between in series with one of the switches and the eDRUMin can differentiate between the two because they will produce a slightly different signal. In order for that to work well, Yamaha needs to design their pads carefully so that the switches produce clear reliable signals that are easy to differentiate. Because Lemon cymbals aren't designed to work this way, they don't need to worry about how clean the switch signal are. This is just to say that when using one of those adapters, there may be times when the a short signal from the bell looks a lot like a signal from the edge and may result is mistriggering.

So I finally got these in the mail after almost a month delay because of the fires.

I am going to plug em into my 2 lemon 3 zone rides, easy enough, but on the ED side, what settings should I start with?

cool ok, so it will sense, or should sense all 3 zones with 2 cables into the adapter and only 1 cable into the ED set to Roland 3 zone right?

Sorry, I forgot that you plan to use an adapter. You should use the 'Yamaha 3-Zone cymbal' pad type with that adapter.
