Note On / Off with sustain pedal

How does Note On/Off mode work with a sustain pedal?

I assume you can program the midi expression so that engaging a sustain pedal will send a particular note on message with a particular velocity and upon releasing the pedal Note Off is sent.

Is it possible to program it so that the next time the pedal is engaged a different Note On is generated and a different one again the next time? If so, how many different Note Ons can be programmed and can you make it so the next press will restart the sequence?

Also, can a pedal trigger more than one note simultaneously?
