First, I really like your idea as I often find myself sticking colored tape to my pedals and writing on them with a black marker. However the problem with saving text is that it uses a relatively large amount of memory for an embedded system. If the data for the labels was saved in the Control Application and not on the device itself, it would doable. But that would mean that if you plugged your device into a new machine, the labels wouldn't be there. Maybe the labels could be stored in the cloud?

...add a micro memory slot (like a cell phone) to the physical unit...? store settings etc.
I just thought the Text labels would be stored wherever the MIDI Expression UI info is stored. THat would be a start, figure out the plugin to a different computer later.
