Just stumbled upon the ME. What a neat product! I was reading through FAQ. There it says you can connect two sustain pedals to a MIDI Expression. Why connect two pedals to a single MIDI Expression? Does that mean each sustain pedal can do a different thing like one pedal sends sustain while the 2nd pedal sends pitch bend all through just one MIDI Expression?

Yes, both pedals would work independent of each other, but sustain pedals can not pitch bend. Basically both pedals would be able to send MIDI independent of each other. Note that wiring two sustain pedals (TS) into a single (TRS) jack might be a bit challenging for most users. Here are some examples of what you could use the pedal to do:
-Send patch changes to a synth
-Toggle settings in your DAW like start / stop
-Turn effects on and off.
-Change presets in a VSTi
-and a lot more
Again, I would recommend a non latching footswitch, because a non-latching footswitch can simulate a latching footswitch, but the reverse is not true. Some people do prefer non-latching switches though.

I'm not a guitar player and I am not familiar with pedals or foot switches. I own a Boss FS5u, FS6, Beringer FCB100 and almost a dozen sustain pedals. I was interested in the Hosa FSC-385 dual latching pedal because it while being small involves only one cord already attached to the switch itself. So you are saying that the two switches on the Hosa FSC-385 will give me two different functions independent from each other on an ME?
