Sustain pedal for pitch bend

Is it possible to use a continuous sustain pedal (like the Yamaha FC3A) with a MIDI expression interface to control pitch bend? I would like to use one pedal for pitch down and a second pedal for pitch up. When not pressing either pedal, the pitch would be at zero, or unchanged.

Sure. You would use the expression curve for that. One pedal would be setup like this:
